Cooking with a Gettysburg Chef – Andy Ernst of the 1863 Restaurant

By Donna White – I had the opportunity to cook with Andy Ernst, the Executive Chef of the 1863 Restaurant located inside the Wyndham Gettysburg Hotel. I was excited when Andy told me we would be cooking his Cold Smoked Salmon, as any dish with Salmon is one I can’t resist. It has always been one of my favorites, and this one does not disappoint. I thoroughly enjoyed learning the steps to brining and cold smoking. It adds a wonderful flavor that pairs the salmon well for breakfast on a bagel, lunch on a salad or dinner with a beautiful glass of Riesling. Thanks Andy for a lovely experience and a truly yummy meal!

The 1863 restaurant is open seven days a week from 6:30am to 10:00pm.
